i'm super on board with this show but low key this school is like the perfect scam. You don't teach the kids anything. you just pocket their tuition, make them cook against each other and arbitrarily expel them if they don't already cook like professional chefs. When are they actually gonna learn how to cook lol

Okay so THESE BROTHERS are literally me and my brother in the kitchen. We would constantly do this - Like a super fun thing to do is rewrite a recipe with no ingredients - just each element as a combination of categories. like change mashed potatoes with sharp chedder and butter - blended starch with oil and nutty/aged component. Then you start thinking about WHY a dish works rather than the rote process of replicating the recipe. ex. If you normally serve a stew that has chorizo and beef, you could replace the beef with say chicken, but what am i sacrificing when i do that? obviously umami, so throw some worcestershire or miso in there and you're rockin. No chorizo? okay I have andouille for the depth of flavor, keilbasa for the fattyness, and i'll add some cumin because chorizo imparts that really distinct cumin tacoy'ness. Oh shit we don't have potatoes? okay so polenta is already more nutty and it's a starch - i can add milk instead of water and use a higher ratio of milk to make the polenta over saturate, throw in any kind of sharp cheese - oh crap we don't have cheddar? well parmesan is aged and nutty. boom Same same but different

they actually do have lessons learning about cooking and different ways of using ingredients etc but they tend to skip over those lessons for the action[tests, shokugeki].
