Trying to analyze the characters through the lens of Avatar: The Last Airbender is ALWAYS the right way to go! You're right about this and the original being two very different movies. This film is the basis for most of the popculture expectation of what a Terminator film "should" be, so people tend to forget that the original was a sci-fi thriller in the vein of the popular slasher films of the era. With regards to the sequels, you're going to get a thousand different opinions on whether or not you should watch which films. What I will point out is that, when they made this movie, they intended it to be the end of the story. The original was made with a sequel in mind (There are even deleted scenes of Cyberdyne finding the parts and talking about researching them), but here the story was over. There is even an alternate ending which showed a timejump to an older Sarah talking about how they successfully stopped Judegement Day and now grown-up John is a US Senator. So each new sequel after this is "extra". Without spoilers, each of the following sequels disregards the ones that came before and tries to "start over" after T2. T4 ignores T3, T5 ignores T3 & T4, and T6 ignores T3 & T4 & T5. So that should tell you a lot about how well each one managed to pull it off. Personally, I think T6 ("Dark Fate") is the best of the later sequels. Not perfect, and I've got those nerdy complains about this and that, but at least it managed to stand on its own feet as a good movie in and of itself.
