I think you're right about Ming being insecure and not seeing himself as... worth of love? Even when they just met he said to Joe that he'd better not give his virginity to a person like him. I think he meant not only to some random one-night stand, but more like someone not worth such an important thing? He can't really understand his own feelings it seems and can't express them properly, and also can't react to others expressing smth good to him. A bit like Vegas who turned anything into aggression because he was afraid to seem weak or vulnerable in front of anyone. And Ming still doesn't believe that Joe's feelings are deep enough to show his vulnerable side to him? Or he stops himself from being nicer to Joe and draws that line "we're not boyfrends" because he thinks if he loves Tong, even one-sidedly, he should fully commit to that feeling only? This whole flashback part (and first part of real time, 3 years later) is mostly presented from Joe's point of view, with him as a narrator (with a few scenes of Ming with his sister or Tong), so we should keep in mind that it's his perspective and we don't really know Ming's thoughts, intentions or background. It's hard to judge his personality only by actions. Speaking about those, there are lots of moments of tenderness from Ming, but usually when Joe doesn't watch like when Ming smiled at the shop assistant's suggestion to write their names on the cups or like when Ming was playing with Joe's hair. He also let him use these cute pollowcases, so I guess he's often plays reluctant or hard to get just cause he likes being pleaded for things, but then gives in. People overlook those moments or take them as fake or shallow, but I think they're actually showing his real emotions that he's hiding. He's definitely a tsundere, and I really like your comparison with a cat. He can hiss and even attack you if you approach, but deep inside he's caring and will be missing you when you go away. As for the timeline, it's a bit like in Untamed. First they showed us Joe falling from the cliff, the ending of what happened in the past. Then he woke up in another body 2 years later, and then in the same ep. 1 we moved 3 years in the past, back to Joe and Ming first meeting. So yeah, basically whole this flashback arc happened during that one year they were in some sort of relationship. We don't know exactly if it was for whole year or not, but I think about so? They mention in later episodes that Joe fell from the cliff in August (hope it's not a spoiler XD), and here they are celebrating Christmas, so from December to August it's about 8 months, and by this time they've been living together already for a while (and I highly doubt Ming moved in with Joe a few days after their initial meeting, so some time had passed before that too). Yeah, they could have pointed that out better, but honestly I don't think exact dates matter that much.

As for Tong, I think you're right about him just being annoyed that he switched his attention to Joe instead of having eyes only for him. I guess this adoration flatters Tong a lot, and maybe he knows he's in love with him, but he doesn't care much if it's romantic love or just a fan's love. I believe everyone around Ming including his sister thinks he's just Tong's fan and sort of a friend. I see Tong as a type that sees people as tools, not caring much about their feelings. I hope it's not the case with May at least, she's so nice and doesn't deserve a shitty husband. As for Tong's attitude to Joe, I think partly he doesn't want to lose his long-time stand-in cause it will be hard to replace him, and as I said before, probably doesn't want Ming to spend too much time and money on Joe instead of being available for him all the time.
