Lol, "Punching your loan shark" was a good one. I don't think anybody gets the entire explanation the first time -- Togashi made a pretty good attempt at explaining clearly but it's still a lot of info. Rewatching it helps a lot. If you're asking how Knuckle derived all those numbers, look at it like this -- how do we convert a person's weight to kilograms? We just choose some arbitrary Thing and declare that Thing's weight as 1 kg. And then everybody's weight is measured based on how much they weigh relative to that Thing. A dude weighing 100 kg weighs the same as 100 Things. Same thing happens here -- Knuckle has his own measure of 1 aura. Maybe the tiny aura required to take a major shit or whatever. What matters is, this now serves as the basis for him to measure greater amounts of aura. He can observe people (like Gon), note the volume of aura they're showing and using throughout a fight, and use that to estimate both their max capacity (POP) and max output (M/AOP). Because his ability revolves around this sort of tight calculation of aura, his sense for these things is probably much more sensitive than the average Nen user's.
