Yeah, Gyo can only see thru In. For Nen deception based on one's Hatsu, your ability to detect said deception depends on the limitations of said Hatsu -- assuming it's even possible to detect it. For Hisoka's Texture Surprise, you may be able to notice it if you physically feel the surface of the material that he's changed but I'm not sure, this is all based on Machi's original explanation of his ability in Heaven's Arena.

Yeah -- (head canon but probably not by much) I believe he's improved it since Heaven's Arena, perhaps extended the surfaces it can change and also improved its seamlessness. Or perhaps the explanation Machi gave us is only a small piece of the ability, which Hisoka explained to her, deceiving her into thinking that's all there is to the ability. It's been commonly observed that while Hisoka tells everyone about his Bungee Gum, he almost never mentions his Texture Surprise. Whether there's any meaning to that, is up for interpretation :-) But generally good to keep in mind that even as our boys are improving, so are others like Hisoka, especially with all the regular battles he seeks out.
