I like to think of the magic system in Frieren like a musician playing music. You need some basics, like dexterous hands and some experience hearing good music (mana and some knowledge of how magic works) but past that mastery is largely in how you know what notes to play. Some might memorize great pieces (i.e. memorize spells and incantations) and that lets them make better music/magic quicker, but if that's all you do you're limited to what was done before. Others, often only the gifted can do this, just learn intuitively what good music should SOUND like. This can be slower, but allows you to do things others haven't ever heard before, make new music appropriate to the situation on the fly. Most do both to some degree. Ubel is on the extreme end of the second sort. She basically doesn't understand 'theory' at all, and so struggles to learn even basic spells by rote, but can do unanticipated things. It's a great magic system because it allows her to upend the system without just giving her a high power level. She doesn't do things better, just differently, and so hits experienced mages by surprise.
