Thank god your doing the animated version 1st and not the live action. I'll admit I am bias towards the original and dislike the live action ones including the movie. Though it'll most likely affect your feelings toward the TV live action if you choose to watch it afterwards.

Aang's a pacifist monk. Maybe that aspect is also a vehicle for the show not to be as violent but the reason is still deeply rooted in who he is as a person and his background. So it's justified in a clever way and made integral to the story, whatever the case.

It is separated in 3 books, although this is a Nickelodeon original and not truly based on books. There are books but those came later after the series.
