One piece filler can be tricky, even though there is proportionally less of it than in most other shounen anime. Sometimes you’ll get a 90% filler episode with 10% cannon, so you have to watch it. The last episode where ace left is a good example of that. This episode I think was also majority filler with some cannon. You can usually tell it’s filler when the characters feel out of character I.E. luffy being a whole new level of stupid. It’s not the same writer as Oda. It’s more than a little bit annoying, but it’s just a part of the genre that can’t be avoided unless you’re adapting a manga that’s already finished. That being said, there are some outstanding filler arcs in the future, and I’m sure people will tell you to watch them when you get there.

Honestly, most filler arcs can be skipped. There are some that are like partially canon in that they contain some canon relevant information and may lead into the next arc (such as how the Warship Island arc had some stuff about the grand line and reverse mountain and it contained part of the ascent of reverse mountain in the last episode of the arc), so for those I would recommend watching them just for your own ability to follow along and then maybe only reactions on episodes that lead in to the next canon arc. There's also instances like here in Alabasta where Vivi's flashback is canon, but contained in a filler episode/arc. I think this is one of the few times where filler is mostly blended into the main arc (comparing to entirely irrelevant self contained filler and the partial canon filler I mentioned above), I can really only think of one other time this happens. For these, I think it's worth watching just to keep the flow of the main arc and follow how the story beats move within the added episodes. As another comment here mentioned, even the filler arc everyone raves about isn't that great. Like it's fun one piece, but knowing it's filler and so basically has to end where it began with no character growth at all makes it not that interesting to me. Overall I'd say just skip most filler and only watch the ones that are partially canon or expand an arc.
