I don't think Sanji was telling everyone his backstory... we cut to it as he was getting concussed and falling to the ground, and then when we cut back to the present he's still face first on the ground. Pretty sure he was reliving it in his head, or it was solely for the viewer.

yeah you have to remember in the context, and actually very often for flashbacks from Oda, the flashbacks are for the viewers only and are generally no actually being told to the other characters. So that flashback happened while Sanji was concussed on the ground and probably only was like his life flashing before his eyes and it only took a second.
