So the reason these episodes were anime cannon was because Oda wanted to include these stories in the manga but they were cut out by the editor due to there not being enough pages

As for navigating the first filler arc it's a bit annoying cause they tried to tie in a couple canon scenes into the filler. After you finish episode 53, I would recommend doing one reaction where you watch from 2:40-7:30 in episode 55 and from 13:00 to the end in episode 61

and just ignore the two characters you've never met before who appear during these scenes, since they're from the filler arc

And there's actual payoff from these episodes: usopp's goggles are a signature item of his throughout the show and sanji does end up getting the tuna and cooking it in the manga
