From the way they explained the magic, they can use one of the four main elements or an element derived from those four. So I think Klaus' steel magic and Mimosa's plant magic come from the earth attribute but something like ice magic would come from the water element.

Oil would come from the earth element. I'm not sure why you would think it would come from water. There is no water in oil. Oil and water will not even mix together so there is nothing tying oil to water.
