Keep in mind Tolkien started writing this while in Hospital in WWI. A lot of the imagery is derived from his experiences. He wrote what eventually became the Silmarillion which fills out the lore of the world in previous ages. Orcs and the Uruk-Hai are the product of Sauron’s “dark arts”, which he learned from his former master Melkor. Melkor was a fallen Valar (sort of archangel) who “bred” orcs, balrogs (like the one that fought Gandalf), dragons, goblins, and other nasties. Melkor could not create life, and the specifics are vague, but orcs are generally described as being a corruption of elves and men. That they come from the ground has more I think to do with grappling with the horrors of trench warfare, and less to do with establishing a coherent origin myth. This is a bit unusual for Tolkien, since every every word, symbol, name or passing comment has rich lore behind it. You notice more on the 23rd viewing than you do on the 22nd. When Aragorn appears at the prancing pony, it’s not explained in the film, but Gandalf actually tasks him with protecting Frodo. Aragorn is Dunedein, descended from kings of Numenor (long story) with close ties to the elves. Some of the wraiths were also men from Numenor, who worked for Sauron over 1000 years before his defeat at the beginning of the first film, when they vanished with Sauron. The Hobbit trilogy is not as well loved as these, but the good bits will answer some of your questions. The wraiths aren’t riding dragons, but “fell beast”. Dragons are much worse.

Tolkien did not start writing this during WWI. He started writing it in 1937, after the success of The Hobbit and under the urging of his publisher, Stanley Unwin.
