Chicken Inasal Recipe

Marinade Ingredients:

  • 2 tbsp ginger, finely grated
  • 2 tbsp garlic, finely grated
  • 1 stalk lemongrass, white part finely chopped
  • 1/4 cup brown sugar
  • 1 cup coconut vinegar
  • 1/2 cup calamansi juice
  • 1 cup Sprite
  • Salt and pepper, to taste
  • 3 lbs chicken thighs (skin on if possible)

Instructions:

  1. In a bowl, mix together the grated ginger, grated garlic, and finely chopped lemongrass.
  2. Add the rest of the marinade ingredients (except for the chicken) and mix well.
  3. Place the chicken thighs in the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and marinate for at least 1 hour, or overnight in the refrigerator.

Basting Sauce Ingredients:

  • 1/2 cup salted butter, at room temperature
  • 3 tbsp annatto oil
  • 1 tsp calamansi juice
  • Salt, to taste

Instructions:

  1. In a small bowl, mix together the butter, annatto oil, calamansi juice, and salt. Set aside for basting.

Cooking Instructions:

  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and shake off any excess liquid.
  3. Grill the chicken for a few minutes on each side until grill marks form and the chicken is cooked through.
  4. Brush the basting sauce onto the chicken, then transfer the chicken to a baking dish.
  5. Bake the chicken in a preheated 350F oven for 30 minutes, or until the internal temperature reaches 165F.
  6. Let the chicken rest for a few minutes before serving.


Garlic Fried Rice Recipe

Ingredients:

  • Lots of garlic, chopped
  • Day-old rice
  • Lots of oil
  • Salt and pepper, to taste

Instructions:

  1. In a sauté pan or wok, heat up plenty of oil on medium heat.
  2. Add the chopped garlic to the pan and gently fry until golden brown.
  3. Add in the cold rice and sauté together with the garlic.
  4. Season with salt and pepper to taste.
  5. Continue to stir-fry the rice until it is hot and well-coated with the garlic and oil.
  6. Serve hot as a side dish or as a main dish with your favorite toppings.
