Chicken Inasal Recipe
Marinade Ingredients:
- 2 tbsp ginger, finely grated
- 2 tbsp garlic, finely grated
- 1 stalk lemongrass, white part finely chopped
- 1/4 cup brown sugar
- 1 cup coconut vinegar
- 1/2 cup calamansi juice
- 1 cup Sprite
- Salt and pepper, to taste
- 3 lbs chicken thighs (skin on if possible)
Instructions:
- In a bowl, mix together the grated ginger, grated garlic, and finely chopped lemongrass.
- Add the rest of the marinade ingredients (except for the chicken) and mix well.
- Place the chicken thighs in the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and marinate for at least 1 hour, or overnight in the refrigerator.
Basting Sauce Ingredients:
- 1/2 cup salted butter, at room temperature
- 3 tbsp annatto oil
- 1 tsp calamansi juice
- Salt, to taste
Instructions:
- In a small bowl, mix together the butter, annatto oil, calamansi juice, and salt. Set aside for basting.
Cooking Instructions:
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and shake off any excess liquid.
- Grill the chicken for a few minutes on each side until grill marks form and the chicken is cooked through.
- Brush the basting sauce onto the chicken, then transfer the chicken to a baking dish.
- Bake the chicken in a preheated 350F oven for 30 minutes, or until the internal temperature reaches 165F.
- Let the chicken rest for a few minutes before serving.
Garlic Fried Rice Recipe
Ingredients:
- Lots of garlic, chopped
- Day-old rice
- Lots of oil
- Salt and pepper, to taste
Instructions:
- In a sauté pan or wok, heat up plenty of oil on medium heat.
- Add the chopped garlic to the pan and gently fry until golden brown.
- Add in the cold rice and sauté together with the garlic.
- Season with salt and pepper to taste.
- Continue to stir-fry the rice until it is hot and well-coated with the garlic and oil.
- Serve hot as a side dish or as a main dish with your favorite toppings.
