Hey all, sorry for the delay on recipes, hoping to have a regular upload schedule on them all moving forward! Please enjoy this recipe from my cooking collab with Kson!

Yakitori and Tare Recipe

Ingredients:

  • 500g chicken thighs (or 500g total of any preferred mixture of meat)
  • 500ml water
  • 3g kombu
  • 6 tbsp sugar
  • 4 tsbp mirin
  • 4 tbsp sake
  • 8 tbsp soy sauce
  • 1 leek
  • Corn starch slurry

Instructions:

  1. Soak kombu in 500ml water overnight and store in the refrigerator.
  2. Cut chicken thighs into 1-inch pieces and set aside.
  3. Cut white parts of leek into 1-inch segments and set aside.
  4. Gently heat kombu water over medium-low heat, being careful not to let the water boil.
  5. Remove kombu and add sugar, mirin, sake, and soy sauce.
  6. Add the green portion of the leek and boil until combined.
  7. Slowly add corn starch slurry until the desired thickness is reached (should be sticky and spreadable, but not thick).
  8. Skewer the chicken thighs (or alternate between chicken and white parts of leek) and grill. Season with salt or with prepared tare.
