Beer-Battered Chicken (From MM Ch. 88) (Patreon)

Preemptive Advice: Read the entire recipe first, before you begin, to avoid added difficulty.
Ingredients:
- 2⁄3 cup – All-purpose flour
- 1 tsp – salt
- 1⁄2 tsp – baking powder
- 1⁄3 cup – beer
- 1 – egg
- Canola oil (or other high heat oil)
- 2 lbs – boneless/skinless chicken thighs, cut into desired size and shape
Directions:
1. Begin preheating 1⁄2" of oil to 370° F in a skillet, over medium heat
2. In a bowl, mix first three ingredients
3. In another bowl, beat together beer, egg, and 2 tsp oil until fully combined
4. Thoroughly combine dry and wet ingredients
5. Coat chicken pieces with batter (add 1 piece to the bowl and mix with tongs until thoroughly covered)
6. Fry chicken pieces until browned and tender, turning once, half-way through, about 20 min total
Note: You will only. be able to do a few pieces at a time. Do not "crowd" the chicken in the oil, ensuring that no piece in the oil is in contact with any other.
Secondary Note: Oil may "splatter" when you add the chicken. Using an ovenmit or glove to hold the tongs can be advised if you are unfamiliar with frying in oil.
–Maintain oil as close to 370° F as possible–
7. It is recommended that you temp check the chicken, ensuring that the center of each piece has reached 165° F, thus fully cooked.
8. Remove chicken from the oil with tongs and place onto a plate covered with paper towels to absorb the excess oil (this keeps the result crisper)
