For more information on some of these ideas:

 2. A stereotypical green-skinned witch - A couple of humans finds themselves confronted by a gingerbread house occupied by a kindly old woman who offers to let them have a nibble since they seem so hungry. One of them is a framer and can make a skill check to recall the old wives tale about this very situation and flee, otherwise they gorge on the treats, gaining the glutton trait and also setting in motion an affliction TF into a wicked, green skinned witch. Green Lands - Day

 3. Phoenix [Desert night encounter] -- someone in the party spots something glowing up on a cliff that flickers like fire. The player character recognizes that it is a phoenix egg that is very valuable to traders in the region. The player can choose to send a scout to climb the cliffs and retrieve it. If successful, the scout brings the egg down without incident, but if it fails, they slip and fall, breaking the egg’s goop out all over them in the process. An affliction begins that makes the scout’s skin start to glow, grow wings, and start emitting bursts of flame, slowly transforming into a phoenix. If the affliction completes, the phoenix flies off and lays more eggs to replace the one they originally broke.

4. Mantis girl disguised as/just straight up a priestess of Domumeris.

6. Hydra [Night encounter] -- three elven sorceresses find a party member patrolling in the woods. They each want the party member to try out a a different spiced wine of a recipe they have invented, but they can’t agree on which cocktail the person should try first. They decide that the person needs to taste them all at once, and for that they need three heads. The person tries all three wines at once and pleases them, gaining a few wineskins as a gift from the sorceresses, but gain an affliction that makes them keep on growing heads with different competing personalities while the rest of them becomes lizard-like in traditional hydra fashion.

Those encounters with no descriptions are yet to be thought up more precisely, so feel free to add some ideas for those in the comments!
