I think the script is so organic and natural, and their chemistry really helps. And yes the music is just great. Some of the best songs in this episode imo. I am really glad you're liking the show. Yeah, I agree with you that they want to be together, but they just don't let it happen. I think the kiss would have happened for sure if Dex hadn't said about fancying everyone, and then ofc Emma got on the mindset that pretty much every time she sees him he's got another girlfriend, and that kind of stalls her. But I do also think she worries a bit too much. Dex is a bit more carefree, but I don't know if at this point - like he says - he's ready to commit properly, and if him and Emma were together that would be it. I think with the other girls he knows it isn't going to last. If that makes sense? But him and Emma have those friendship foundations as well as knowing what it's like to kiss as well.
