It's not QUITE as bad as it looks. She would have been writing on parchment, rather than paper, and once it had thoroughly dried, she could scrape the spilled ink off (a "pen" blade [like the main blade on a Swiss Army Knife] was not just for shaping and sharpening quill pens, but also to act as an "eraser", to remove ink from parchment). She would have to redo a couple of pages, but that's pretty much it. She wouldn't have been writing in an assembled codex in any case; the scribe would do signatures separately, before the bookbinder assembled them into the final book. Paper would actually be worse, because the ink would soak in in a way that it would not on parchment; that was what happened when I knocked a bottle of ink onto an architectural drawing I was finishing a while back.
