Also, the reason Jasper can't break out of the fusion is that Lapis is matching Jasper's emotions and she has more power over the ocean than Jasper because she was the original user or something. Also, Steven and Connie are just friends.

Basically with malachite (jasper+lapis), they both wanted to fuse. Once they're fused, the one with "more resolve" or more willpower can control the fusion and hold it together, or tear it apart. It takes extreme concentration to do so. You can see as lapis is pulling them under, the fusion starts to come apart before being forced back together. As a side note, malachite doesn't even have her own voice. If you listen, it's just jasper and lapis speaking overlapped. They're basically a really awful and unstable fusion!

Also, once you've watched the episode "reformed", you should watch the Steven universe extended theme song! Even if you don't react to it, it's got some cool bits of lore, full theme song, origin of the theme song, teasers for upcoming events and more!

Also one more thing- some episodes aired out of order. After rearranging them, the true first episode of season 2 is "Full Disclosure" with "Jailbreak" being the season 1 finale. Viewing them in the order you are doesn't really change much at all, but it definitely has a better season structure after being rearranged(:

Since we hit season 2, you should watch the extended intro, i believe the best time to watch it is after reformed for a reason I shouldn't spoil, it's nothing major though

Gems are indeed mostly all female, some may present like other genders, but most of them are female, and Ruby is just a more masculine girl, and she uses she/her. Garnet is basically their relationshp personafied, and their love is so strong it allows Garnet to be fused for so long.

also speaking about Malachite (Lapis and Jasper) the reason they cant unfuse is kinda problematic. Since fusions represent all types of relationships including friendship, familial, romantic or sexual, it doesnt mean it has to be a good relationship. Basically Malachite is a r*pe type situation and its interesting to say to least to see a show portray that. The reason other fusions are capable of unfusing over disagreement is because the fusions we have seen before have all been consentional and with people who respect each others opinions. Lapis forced Jasper to stay fused.

Eh i wouldnt say no other cartoon wouldnt do that, theres have been a lot of mature cartoons over the years, be it superhero ones which deal with the problem in this, aldough a bit less realistically. But other then that you have Adventure Time, Arcane, Bojack Horseman, Rick and Morty, Invincible, The Legend of Vox machina, Owl House, Infinity Train, Gravity Falls, Ambhibia and a whole lot. Sure I can see Steven Universe being one of the pioneers of the realistic emotions and maturity in cartoons, along side Adventure time and other shows running in the same time, but its definatly not the only one which does that.
