I want to start this off by saying, this meal is a LOT less calories than the majority of my other meals. And that is because a few people have asked for some lower calorie options.

Typically when you are just eating a lean protein and non starchy veggies, the calories will be pretty low. So if you want to increase the calories in this recipe, you can double the chicken or veggies, or you can always eat it over a bed of rice or add potatoes. I think this would also go great in a pasta tossed with a little olive oil as well.

My meals will continue to average between 375 - 475 calories(ish). But I will try to do the occasional lower calorie option. But hopefully my recipes continue to be versatile enough that most of you can adapt them to fit your goals.

Regardless of the lower calories, this meal packs a lot of flavor, with just a few ingredients.

Okay so I made this and the buffalo chicken dip pasta for my meal prep for this week and my son and husband want to eat it too... 😭😭😭 now I have to triple it all! I should just go back to eating rice cakes and cucumbers! They hated that! 😆
