I love the simplicity of bowl style meals like this. Not only are they packed with flavor from all of those ingredients piled on top of each other, but they are super easy to make.

I think this recipe took about 20 minutes total to make. So add this to the list of quick AND delicious recipes to try!

Side note - I initially purchased a can of black beans to add to this dish. But because I keep all of my meals under 60 grams of carbs, I had to skip them. But it's important to note that I only keep the carbs under 60 grams for those individuals with diabetes trying to follow the ADA recommendation for carbs per meal. But if you have the room in your macros, adding some black beans to this is a great way to increase the protein and fiber.

While I was coming up with this recipe, I had an idea for another potential recipe.  A Southwestern Egg Roll Bowl. Let me know in the comments if you'd like something like that in the future as well.

Delicious! So much flavor! I am not a huge fan of ground chicken so I used a pound of chicken breast and cut it pretty small. Delicious!
