Back with another recipe that gets creative with cottage cheese. If you are not a fan of cottage cheese, don't worry, I promise next week's recipe will be cottage cheese free :)

As for this recipe, it is pretty filling as it is, but it's also a blank slate for loading it up with veggies. You can either roast them in the oven with everything else, or you can even blend some up in your cheese sauce. It's up to you. And obviously, you can always just serve them on the side.
