*TikTok Recipe*

First off, this was a very time intensive video and PDF. So if you see any mistakes or anything is not 100% clear, please do not hesitate to point it out so that I can explain and/or fix it.

I teased this a few weeks back on TikTok and the feedback was overwhelming. So many people wanted to know how to make it, so here it is. This is the first time I'm posting something like this. It's more of a full on video of me cooking something that is not meal prep related. But I did add the calories and macros for pork shoulder below, just for informational purposes.

Meal prep will continue to be the main focus of my page but I do enjoy the occasional "Let's make something that doesn't involve tracking calories". Is that something you guys would like to see once in a while? Maybe once or twice a month? If so, please let me know.

As we move into 2023, I have a lot of things I want to do with Patreon. More stuff like this but also little side dishes like different types of veggies that you can add to your meals. Kind of like an a la carte meal prep menu. And this would be on top of what I already do. So it would just be more value for your membership :)

*Nutrition Note*

The calories and macros listed are the nutrition facts listed on the package of the Smithfield pork shoulder that I used. Something like this would typically be made for a large gathering, so most people would not be worried about portioning out or counting calories. But I added the information for anybody that may need it.

If you are trying to track this, keep in mind that the nutrition information is for 4 ounces of uncooked pork. This would be around 3 ounces of cooked for the same macros.

Puerto Rican Pernil | Slow Roasted Pork Shoulder

Stop what you are doing and watch this video! You won't want to miss this one! If you have never heard of pernil, it is a slow roasted pork shoulder (also known as a picnic roast) that will have you sitting in front of the oven in a puddle of your own drool waiting for it to be ready. It can be enjoyed in many ways. Served with a side of rice and beans, or added to a Cuban sandwich, there's really no wrong way to eat it. Pernil is one of the tastiest ways to enjoy pork. It's juicy, it's tender, and it's loaded with flavor! This is traditionally served around the holidays in many cultures, but honestly, it's so good, you may find yourself making it throughout the year. Spice Rub Ingredients: (Per pound of pork shoulder) 2 garlic cloves 1/2 tsp White Vinegar 1/2 tsp Olive Oil 1/4 Tbsp Adobo 1/2 tsp Oregano Additional optional ingredients: 10 garlic cloves to be added whole 1-2 packets of Sazón added in with the spice rub above 1/2 Tbsp Adobo to be added to skin later in the cooking process Cook times: Full size Pork Shoulder (Picnic Roast) 7-10 lbs 350°F (Covered) for 4 hours 350°F (Uncovered) for 1 hour 450°F (Uncovered) for 15-30 minutes or until skin is crispy and internal temperature of pork shoulder reaches 145°F Let rest for 15 minutes Half size Pork Shoulder (Picnic Roast) 4-6 lbs 350°F (Covered) for 2 hours 350°F (Uncovered) for 30 minutes 450°F (Uncovered) for 15-30 minutes or until skin is crispy and internal temperature of pork shoulder reaches 145°F Let rest for 15 minutes Ovens may vary, so these above cook times are simply a guideline. Be sure to check on your roast when cooking uncovered to make sure the skin does not burn. If the skin is crispy but the pork shoulder itself needs longer to cook, simply remove the skin and let the pork continue to cook until done. Is the seasoning what makes it Pernil, or the cooking method? My husband loves to smoke pork shoulders so thinking of doing this recipe just in the smoker- would it still be Pernil?

I'm in central FL, what store did you find the meat in that has the skin? I find them without it usually. Should I find a butcher or meat market? Love your content & how detailed you are, Thanks!!

I get mine from Walmart. There's usually a mix of with and without skin so I just search through the pile.

Ideas for leftovers? I made this today with long grain brown rice in home made bone broth. I have 10 lbs and am 1 person. I plan to freeze it in 1 lb packages, but any ideas for the leftovers?

I really like my leftovers on a Cuban sandwich. You could also add some BBQ sauce for a different flavor, and make a pulled pork sandwich.

I learned how to cook a picnic roast a few years ago when I noticed how cheap the cut of meat was. I only cook for two people. It freezes really well. I like to make carnitas tacos with my leftovers. Toss the shredded pieces under the broiler to both reheat and crisp them up add to a tortilla with your favorite toppings. Fast and delicious.

Anything green? I love Mustard Greens only available this time of year at my grocery. But colllard greens and kale are also good. Mustard cook the quickest. Collards take the longest. But if greens aren't your thing, then broccoli and cauliflower are always great low cal veggies.
