Your voices have been heard. Soup season is upon us, so here you go! A low calorie, high protein, soup to warm you up as the colder weather approaches!

I don't want to bombard you guys with just soup, so I won't be posting soups back to back, but I do have a few more soup recipes coming as the holiday seasons start rolling in :)

One thing to note: If you use this same brand of orzo, the box is for 8 servings. The recipe only calls for 6. The easiest way to remove those extra servings accurately is to place the box of orzo on your food scale, then tare it to zero. Set it to grams and start removing pasta until you see -112g on your scale. That is 2 servings x 56g each. Keep in mind, this method only works if your food scale has the ability to show negative numbers. I have seen some people say that theirs doesn't. If yours does not, you'll jut have to weigh out 12 ounces of dry pasta manually.

Can this be made in a pressure cooker/instant pot instead of a slow cooker??

Yes it can :) There are a couple of websites that have some conversions for times for slow cooker to instant pot.

I've done a few recipes in my instant pot that should have been slow cooked (mostly me forgetting to manage my time 😅) and I've found that 20-25mins on high pressure for chicken recipes usally does the trick! Most of the time they come out the same, other times the slow cook method definitely helps the flavors really shine 😋

Can you just add the dry orzo to the crockpot and let it cook that way?

I did it this way today. The 335grams of dry orzo sucked up nearly all 8c of broth. Amazing flavor, but more of a stew than a soup - i ate it with a fork. I also got 8 400gram (about 2c) portions! When i reheat the other portions, i can always add enough broth to make it more soupy. Very, very good!

Is there something that I can substitute for the turmeric?

You can leave it out if you don't have any. It won't change the taste dramatically.

Yum!! Just tried this one today. It’s amazing!!! I know I’ll be making this one often…. And it honestly tastes so good without the cheese as well if you are trying to save calories. I am impressed with this one!! Thank you

I ended up not being the biggest fan of this one. For my personal liking, I'd let it go maybe an extra hour to get the carrots to soften up more, skip the zest and only use 1 lemon because the lemon flavor was sour and a bit much for me.
