The best thing about this recipe is that you can make it as a pasta, eat it over a bed of rice, or actually turn it into traditional enchiladas. So hopefully everybody finds a way to enjoy this recipe one way or the other :)

I don’t even like enchilada sauce, but this recipe was a HUGE win in my house! Hubby said that one goes on the short list of ones he wants to eat more frequently!

Is there a replacement for adobo seasoning? I couldn’t find it 😩

You can easily make your own at home. Just google homemade adobo seasoning. It's just garlic, onion, oregano, salt, and pepper really.

If your grocery store has a Hispanic/Latin food section, look there rather than the regular seasoning section

Awesome recipe! I used chickpea protein pasta (barilla wasn't available). Added some Chile's in adobo (90 cal/can or 15 cal/serving) and garnished with sliced green onion & cilantro. Excited to try other recipes on this Patreon page!

I usually do chicken for 20-25 minutes on high pressure in the IP.

Had this last night. Was impressed with the serving size. I think I may have gotten 7 servings instead of 6! Really good and really easy!

Could you use red enchilada sauce? I do not care for the green

this one is yummy. i take out two servings, one for myself and my husband, then i freeze the rest individually for lunches.
