When Nani and I made these, after seeing how soft and moist they were, we couldn't decide whether to call these protein bars or protein bread. It has a consistency similar to bread pudding :)

Are these supposed to stay very moist almost like a spread or paste texture on the inside? Im thinking it may be the ingredients I subbed, but now see it indicates they are very much like a pudding on the inside so not sure what the texture was supposed to end up being like. The tops are getting very browned, but the inside is still very soft and "spreadable." Not sure I can cut them and pick them up like a bar vs eating in a bowl. Can someone clarify?

Made these pumpkin bars w/Peanut Butter Protein Powder vs Vanilla (+ I always use vanilla extract vs orange in this recipe). Mixed in a few walnuts. So Good!!

This week's Pumpkin Protein bars became Chocolate Banana Protein Bars... Follow the pumpkin recipe but swap out pumpkin puree for 3 bananas, & chocolate protein powder instead of vanilla. I used only 3 scoops of powder, as I thought 4 make them dry. I also did 1 scoop of cocoa banana powder & 2 chocolate. I omitted the pumpkin spice & nutmeg. As I wasn't sure how those would taste in the banana. Added walnuts!! So good...Thanks again Zach, your recipes are fabulous!

I would LOVE some more snack ideas. I don't typically get cravings for sweets and a lot of things I find are sweet. I always default to either raw veggies and dip or cheese and crackers.

These are so good. It near impossible to find high protein baked goods. I like the idea of using Banana….might try that.

Reporting back - I subbed the banana (kept everything the same) and it was very dense and a bit dry. It had better flavor cold than warm. I wouldn't do that again, however, I felt that it was still better than most protein bars, so I ate about half the pan and will toss the rest.

However, I did sub 1/4 cup chopped golden raisins for the chocolate chips (and less swerve) for the Pumpkin version, just to make it more "breakfast" for myself. I like both versions! Might swirl half the pan with chocolate chips and half with raisins! Also, this should go without saying to use whatever protein powder you think sounds good, but I used Qwest Cinnamon Crunch. It was fine. I didn't even use less cinnamon - I like cinnamon though! :)

Wanted to make these! What kind of protein powder are you using? I have isopure and syntha 6 vanilla which have about 100kcal difference in calories! So lmk please :)

I use Legion protein in most of my stuff nowadays. It's typically around 100-120 calories depending on the flavor. But this is an older post and I used Optimum Nutrition Gold Standard Vanilla. I believe it's 120 calories per scoop.
