Steven lifting Peridot I believe has more to do with his power to float. As we saw, nothing could weigh him down when he was floating, so in that sense when he makes himself float, nothing would be too heavy for him. ... Not even Peridot

The way fusion works is the better the relationship of the two gems fusing or more compatible the gems the more regular looking the fusion. Extra limbs, eyes etc are normal. For 3+ fusions there will always be extra something. Its never explained out right in the show
