Actually the two I photographed in the previous update came off the tree the next day.  Yesterday I got two with squirrel bites on them (not recent though, because the bite wounds were all black & scabby instead of wet like they'd be if the fruit had been bitten that day.)  I tossed those because I don't want squirrel germs, and these things are not big enough to make it worthwhile cutting off the bitten part.

Today I found another bitten one, and these four which are pristine and came off the tree easily; the best indication of ripeness.  Note that two of them came off with the "crown" still attached.  It is more typical of these to come loose UNDER the crown, as the two larger ones have done.

Color temperature is off in the top shot.  My counter top is actually blue; the bottom two close-ups are more accurate in terms of chroma.  The black mottling on the persimmons is probably caused by a fungus that also makes black spots on the leaves.  But it doesn't impair their flavor and it hasn't made me sick in the last 3 years I've been eating these things.

(Roland) Splendid. Now turn these over to the does for the making of jam.

Katfeathers

Nice, although... I was thinking they'd be bigger.
