It would do all manner of things, depending on how you set up the synthesizer. I don't have a pitch-tracking module, but supposedly the Korg MS-20 is capable of analyzing the frequency of an audio input and making its oscillators match that frequency. An envelope follower will convert the signal's loudness into DC voltage that can be used to control synthesizer parameters. Or you can just use the modular synth as an "effect" to add distortion or delay or chop up the signal crazily.
