Its understandable to be confused regarding the modern setting with medieval/magic characters just thrown in, Think of it this way, the world is mostly the same as the real world, with a major difference, Magic exists in this world, there's even a mage faction responsible for keeping it secret from the rest of the world, however with the magic being present in what would be considered a normal real world setting you end up with history being more fantastic then it should have been, such as Merlin from Arthurian legend would have been a real and powerful magic caster many years ago. Also gods and demigods would have existed in the past making characters like Hercules and other historic figures that were all powerful actually existing with genuine magic and godly powers. The point I'm getting too, is the reason behind the weird mix of modern and fantasy content is because in the modern era, there is a magic ritual to summon famous historical heroes/villains to fight in the modern era for a great prize that can grant any wish. My favourite part of the fate series is trying to figure out who the historical figures are before its revealed in the show, very fun to guess. I hope this gives you a rough idea of what's happening in these openings now. Also excellent reaction ^^.
