Apparently I have recorded the original version of this movie. (Old DVD from friend)  My son has a blue-ray and it is a shorter length.  Not sure what was taken out.

So you did in fact watch the extended edition, however it's a different extended edition than what I have. I've had the extended edition box set on laserdisc since 1994. The two scenes that are different between mine and the one you watched are the scene where T-1000 is searching John's bedroom, and the ending which shows old John as a senator. Both of those are in the supplemental material in my box set, but not in the film itself. This film was released July 1991. I was a projectionist for Cinemark then in Danville, KY. I remember getting the very first teaser for this film in March of that year. I was very excited to put it on a print and show it. I started the film and then ran down to the auditorium to watch with the crowd. I wanted to see and hear their reaction. When the teaser first started, and for the first several seconds, people didn't know what it was. And then about halfway through I started hearing people reacting and talking because they recognized the terminator endoskeletons. But then at the end, when you see Arnold's face and then the T2 logo, the entire auditorium erupted in applause and cheering. It was an amazing experience that I'll never forget.
