Just want to mention that Rem is being deferential by calling Ram "nee-sama" (a respectful way of addressing an older sister). Everyone else calls Ram by name. You'll learn a lot more about them (and everyone else) eventually. It's all meant to be a big mystery right now, so keep the theories coming!

Yeah, Subaru's comments are extraordinarily cringe, but they are meant to be so. His inner-monologue from the novels isn't adapted, but he cringes at himself half the time. They also do know what dates are in this world, Emilia just doesn't know what one is. A parallel can be drawn with how she doesn't understand what a date is and how the children don't either. She is also completely oblivious to the fact Subaru has a crush on her.

Rem never calling Ram by name comes from the Japanese tradition of reverence of one's elders. Ram is the elder of the two, thus Rem addresses her as "Ne-sama".
