I love seeing new watcher being so confused lol. I was waaaay to impatient and read all of the manga after watching the first episodes. It's sooo good! And so much still to come in this season!

In the first episode, Maomao mentions offhandedly that the apothecary is her adoptive father, so yes you're right. We don't know who Maomao's biological parents are at this stage.
