Others have been suggesting Master & Commander for realism and some measure of historical authenticity (and rightly so). However, if you wish to go in the opposite direction - a fantastical journey set in roughly the same era which, like PotC, veers off into myth, legend & folklore and a main protagonist for whom the laws of physics are more guidelines than actual rules, then I would suggest The Adventures of Baron Munchausen (1988) by Terry Gilliam. Not much piracy per se but plenty of ships, shipwrecks, monsters, petty bureaucrats and superhuman feats of derring-do. And bonus: it also stars Jonathan Pryce!
