Perhaps the PCs have captured a criminal and are returning them to justice, or perhaps if it's a demon, to undo some terrible magic. Moondogs just want to take down or even dispel the evil so the PCs have to find ways of distracting them so they don't lose their quarry. It's a bit of stretch.

That said, in most of AD&D GMing, the PCs were almost never good with CN being the favoured alignment. So Moondogs would make a great enemy.
