I think there were new writers from season 3 to season 5 which explains the inconsistency in not mentioning Michael's baby. They decided to just focus on him separating from his wife. But even as a new writer, you should have researched the entire history of the show and what was written before that.

As a half-hour comedy writer myself, I sometimes get disappointed when there are glaring omissions or inconsistencies. I totally get small stuff, but this kind of thing bothers me. Know the characters you're writing for. Other people say to me just enjoy the show, but the professional in me still gets frustrated 😀

When it comes to Michael's missing baby, I'm thinking the writers making him a general deadbeat versus being a deadbeat father was an attempt to preserve the humor in the situation. Being a crappy husband is far more comedically redeemable than being a crappy father.
