Although originally I wanted to treat the Dwarven nation as a typical monarchy, I decided that I could do better and be more original.
After giving it quite some thought, this is what I came up with. Not exactly monarchy, not exactly democracy, but something decentralized enough to be stable along the ages, while also fit for the culture of the Dwarves.

Also note that I decided upon the lifespan of a dwarf being able to range between 50 and few hundred years (max 300) depending on the conditions they live in.

I like it. Seems like the Temple has quite a bit of power obviously. What would the level of corruption be then? Average I guess? Also with the peasants, like modernlife today, would there be any chances for advancement into the Guilds or even Nobility? Also, would there be a system or council where the Nobility could question the decisions made the Lord/Lady without their heads getting chopped off even though they can veto?

Yeah, I suppose we can talk about average levels of corruption. Peasants can become citizens by owning property in the Capital and completing military service. Not sure about them being able to become nobles, unless by being invested by the Temple/Lord. The nobles can't directly question the decisions of the lord, but they do hold enough political influence to have a word. Let's not forget personal guards which they could constitute their own mini army if they came together to it.
