You'll get to love Quark (and the Ferengi episodes). He and Odo are the best frenemies in all of sci-fi, imo. Odo's sarcasm is Quark's everlasting annoyance. All the make-up they have now will quickly get improved, it just looks a bit rough in the first few episodes.

So happy to see that you're doing the whole of DS9. It's my favourite out of all the shows. Yes it definitely does have a fairly slow first couple of seasons but from s3 onwards it is probably some of the best TV I've ever seen.
