Just for you to remember, the hero itself is not the main factor for their class designation but the noble phantasm which they got (Riders dialogue with Waver in Fate Zero, while he summons his chariot for the first time, is a good example). Your confusion will be lifted by the end of FSN Heaven's Feel.

Wait isn't it also tied to their Lore too, tho? Since Berserker designation only requires the Heroic Spirit to have "gone mad" at some point in their background lore (whether legit or just made up bullshit by ppl later down the line doesn't matter). Not all Berserkers have Noble Phantasm w/ Madness-type effects, some have effects entirely unrelated to the Madness-attribute they require to be Summoned from a pool of Heroic Spirits w/ said trait as per Lore. I'm sure same should apply to Avenger-class Servants as well, as well as Ruler-class Servants as well, since their classes aren't tied to their Noble Phantasm per se

The noble phantasm results through a "part" of their lore. Thats why the "same" Heroic Spirit can appear in different classes since different parts in their lore can result into different noble phantasms. The prime example on how this works is actually the Rider class servant here in Stay Night/Grand Order and the Assassin class servant of black in Apocrypha/Berserker in Strange Fake, but i cant go into detail because of obvious spoiler reasons.

Well i mean we are only touching a surface knowledge on how the Throne of Heroes and summoning works when you add the Ruler class as well as Avenger AND other exceptions like you mentioned to it we can philosophize the whole night over it but i dont really have the time to do that xD
