Mystic knights are made of magic, so it stands to reason that their bodies would have some inherent alchemical properties, but they're so resistant to damage that it's impossible to see any benefit from this interesting magickal fact. However, the knights' emissions, on the other hand, are readily available if one can find a willing donor, and provide the savvy potionmaker with a powerful alchemical catalyst. 

With a mystic knight's "contributions", potions that might take days or weeks to brew to an effective strength can be produced much more quickly. As you might imagine, then, any magic bottler of note has at least one mystic knight "assistant", although if any of these arrangements start out in a remotely professional manner, they seldom remain that way for very long.
