The reasons for the elves leaving Middle Earth are complex as others have said. One of the key reasons is that the grace given to them by Eru Ilรบvatar and the Valar (God and his highest archangels in other words) is slowly but surely fading so long as they remain in Middle Earth. This wouldn't be the case, but during the First Age, the fallen Valar Morgoth (Sauron's former master and the first Dark Lord) saturated Middle Earth with his own spirit and corrupted the land, giving rise to many evil creatures such as dragons and corrupting many spirits including the Balrogs and Sauron who were originally Maiar (the order of "angels" immediatley subordinate to the Valar). While immortal, Elves are particularly susceptible to the corruption in the land and over time, they actually fade until they achieve a ghost- or wraith-like state of noncorporeal limbo. One of the reasons why Elrond and Galadriel are so revered is because they have the ability to fend off this creeping corruption both in themselves and in their people. It's partly about who they are and partly to do with the fact that they are bearers of two of the three elven rings of power. It's worth noting that the Five Wizards (Gandalf, Saruman, etc.) are also Maiar spirits like the Balrogs or Sauron, but they were sent to Middle Earth to act merely as advisors and to give wise counsel to the leaders of the free peoples. To keep them from simply reshaping middle earth through their tremendous innate powers, the wizards' powers were sealed by the Valar and they were made to wear the frail forms of elderly men. Thus, they would have only their wisdom, words, and what power their mortal forms could conjure with which to influence the world. When Gandalf returned to Middle Earth after his death, however, it was by the power of Eru Ilรบvatar himself and the Creator allowed him to keep much more of his power than the Valar had before.

The Battle of Helms Deep was three months of night shoots, filmed in a rock quarry in the rain. Harsh work environment for sure! And those rubber suits the Uruk-hai had to wear were often still damp and cold when they put them on because they'd been getting soaking wet the previous day and it was hard to dry them all out properly in the few hours between shooting. Night after night after night of this. Crazy time! Lots of injuries during this film. When Aragorn, Legolas and Gimli had to run after the Uruks to save Merry and Pippin, right beforehand, Aragorn had broken two of his toes kicking an Uruk helmet, Legolas had fractured a rib because he fell off a horse and Gimli's scale double (Brett Beattie) landed on him, and Brett (who had to do most of the running and fighting for Gimli) had dislocated his knee. So they were in some pretty major pain when they filmed that running! King Theoden also got hit in the ear by his own lieutenant (someone fell on Gamling's sword and he accidentally hit Theoden, who needed three stitches, and Aragorn got hit in the face with an Uruk sword and broke a tooth.
