I was also just thinking about what you said that people spend their whole lives creating to finally write something like this. I think there's definitely something to that. However the author of Vinland Saga, Makoto Yukimura, has only written a couple other manga, and only one other series which was much shorter than this. Attack on Titan was the first manga Hajime Isayama ever wrote, and he started it when he was just 22 years old. Whatever it is that gives people the gift to create stories like this, I just feel fortunate to be able to experience and appreciate it.

Interesting and very subtle callback (imo) to discrimination at the end. Thorfinn is just like the raiders that killed Einar's family, yet after spending so much time with him in unison, he says "You didn't kill my family", because he discriminated.

This might come off as a bit pedantic but Attack on Titan was the first work Hajime Isayama had ever had published but not ever wrote. He worked on cartoon design (anime/manga) in both high school and college (even more broadly practiced it as early as elementary school) and was submitting works to contests throughout both high school and college. While starting AOT at 22 is not a lifetime of creating to get to that point the point is still there that his first manga wasn't AOT and it took him a hefty amount of time and other works to get to that first and absolutely amazing published work. Some people do have a gift for this stuff but it's way beyond that and he had plenty of writing he had done before that which grew him to that point. Sorry if this came off as overly nit picking but in my opinion its important to point that any of these people don't just have their first works in any medium be an AOT or Vinland Saga even if its the first we ever see, there is still a long road of works before these that got them there and its their unseen/heard works that got them there.
