Watch order for Star Wars is preference based for the first 6 episodes. Some ppl prefer release order and others prefer chronological order. But as you mention about the animated series you should totally watch them. They’re better than most of the movies imo

I think knowing what happens is part of what makes the prequels fun. But more practically, Then you get stuff like Rogue One and Andor which don’t really work if you haven’t seen the OT since it assumes you already know all the world building behind the Empire. If you watch Rebels and Clone Wars then maybe some of that world building might carry over. But I kinda think the Faloni series should be done after everything else just because of the sheer quantity of it.
