Hopefully there will be more info on Sokka in the next series or in the movie/series about what happened in between the end of Avatar - Korra I’m so hyped for that movie/series some things will be taken from the comics too and some will be original.

To clarify, Uncle Iroh is very much dead, his spirit just decided to stay in the spirit world which is why Korra and others have seen him. Sokka (and Suki) didn't have any kids. There are graphic novels you can read online that take place between end of Last Airbender and Korra, also cover what happened to Zuko's mum!
