I don't think he was surprised that he was left handed. Ushijima is literally one of the three best aces in Japan and has been in magazines and stuff, plus Karasuno did a ton of research themselves. Pretty sure people know he's left handed. I think it's just the subtitles that weren't really the best in that moment. In every other subs and also the translations in the manga it's more like "There he is, the leftie." Unfortunately the subs from Crunchyroll for season 3 specifically aren't the best in my opinion…
