For Death Gun's horse, the reason it is white instead of black is because it's an allusion to the Horseman of Death.

I vibe with the idea of Sinon being a hero. I understand how Sinon’s feelings on the gun/killing-the-robber situation could have been left to develop uncontrollably. I can imagine a parent not giving their child the reassurance that the child needs due to not being in the best mental/emotional place, and the parent not having family or friends who are apt to recommend utilizing therapy and/or other types of healthcare services in such a situation
