Ozpin's speech about the war and why people began naming their kids after colors was Monty's way of explaining his "color naming rule" in the show. When the show was established, and people started wanting to create their own characters / teams, he set the rules out so people would know what constitutes a "canon" guideline. Name of characters in RWBY must live up to at least one of the following requirements: 1. Be a color (Ruby Rose = Red flower, Mercury, Emerald) 2. Sound like a color (Blake = Black) 3. Mean a color by the definition or translation (Weiss Schnee = white snow in German, Yang Xiao Long = sunny little dragon in Chinese) 4. Make a person think of a color (Sun = yellow or Neptune = the god of the sea = water = blue) All huntsmen team names also have to be a four-letter acronym that abide by at least one of the four rules, so we have RWBY, JNPR, CRDL (cardinal), SSSN (Sun's team, pronounced "Sun") and the team you just saw at the end with the bunny girl Velvet is CFVY (Coffee). Also, Velvet's full name is Velvet Scarletina, so the color rule is in her last name, rather than her first. Not all of the color allusions are immediately clear, but they can all be tied into a color in some way, and CRWBY (Crewby) have continued to use the color naming rule even though Monty is gone. Sometimes there's some sort of physical feature (like Neptune's hair) to help link a character to a color.

Beowolf Chow

The Bunny Faunus is Velvet Scarletina. You saw her in Volume 1 when Cardin was bullying her and pulling her ears. The fans liked her design so much (as you can see from the great fanart) that they wrote her a bigger part. From what was said in this episode, she's a second-year student, and a member of team CFVY (Coffee). CFVY were supposed to be the team organizing the dance, but their return was delayed, which is how Yang and Weiss got the job.
