I realized not long ago that I don't really watch TV anymore, and hardly ever find movies that are interesting. What caused me to turn away from mainstream entertainment, and what am I watching in its place?

You should absolutely watch Lower Decks. The showrunner was the TNG Season 8 twitter person, and it's clearly done by people who love Star Trek. It's honestly the most fun I've had with Trek in twenty years. It's got comedic elements but it's also got a lot of heart. It takes a few episodes to find its footing, but once it does, it never lets up.

95 percent of my video entertainment comes from YouTube. LGR, TDNC, The 8-Bit Guy, Camping with Steve (bizarre but strangely relaxing), Smarter Every Day, Vsauce, Tom Scott, Adrian's, and Colin Furze just to name a few. Movies, I've definetely slowed down on. I agree with you - Rogue One was amazing, but the rest of the new ones have been awful. The last movie I saw was Tenet, and I gotta say... I found that one to be fresh, compelling, and mind-bending. I ended up seeing it twice. As for TV, the last TV show that grabbed my attention was The Expanse. Seasons 1 and 2 were rough (low budget, slow pacing), but I've found the attempt at hard sci-fi to be very, very good. Especially when their budget gets upped in Season 3 and again in Season 4.
