I wonder if the computer chip has made electronics on a different, inaccessible level than when components could be replaced and, dare I say, understood?

I'm not sure a contactless thermometer would be good for use with diverse materials anyway since many materials have different IR emissivities, so if you can't adjust that setting you won't get accurate temperatures from whatever you're pointing it at.
