the Manga is a little bit darker/more gruesome than the anime, but only in select scenes. There are a few moments of anime censorship, but never anything too drastic. some examples from what you have already seen are Zeff cutting off and eating his own leg to survive rather than it getting crushed to save little Sanji and Arlong shooting Bellemere in the head instead of the chest. If you want to see insane and absurd censorship though, check out the infamous 4kids dub. It's so bad it's funny.
